Its octagonal handle fits comfortably in the hand allowing it to excel at peeling root vegetables and fruit. DAMASCUS HAMMERED STEEL
Each stainless steel knife blade has a core of premium AUS10 steel with 45 layers of Damascus steel folded over top. The mark of the craftsmen is left one by one as the blades are finished with a unique hammered finish called tsuchime. The hammered finish also helps food to release from the blade while cutting. High polish damascus steel blades are laser thin for precise cutting. Easy to clean stainless steel without the high maintenance rust issues of traditional carbon blades.
KASHI JAPANESE OAK HANDLE
Kashi / Japanese oak tree is evergreen. In early summer, it flowers in a similar way to chestnut. In Autumn blooms become small acorns. Japanese oak has a structure that is uniformly hard, has excellent dent resistance and has better impact strength than American oaks. Kashi is often found in the Kanto area (Tokyo) In Budo it’s usually use to make wooden weapons such as Bokken. Since it is heavy and very resilient, it’s one of the most favored woods to use. Japanese oak was the favorite wood of famous sword masters throughout Japanese history, because of its practicality and high durability.

HAND ENGRAVING DETAILS
Meticulous details include a beautiful yakkin branding of the Kikusumi logo on the end of the handle just as was done in the EDO period. On either side of the blade are hand-engraved names of the KATURA series name, Kikusumi logo and its origin in Seki Japan in kanji. These are some of our highest rated knives from our customers.
