Aomori Hiba has been used to build temples, shrines, castles, and other important works of Japanese architecture throughout many generations. Japanese chefs have long utilized the knife friendly, mold & bacteria-resistant qualities of hiba wood for their cutting boards. AOMORI HIBA WOOD
The Hiba is a slow-growing, long lived cypress tree that is native to northern Japan’s Aomori prefecture. It is one of the three largest tree species of the Japanese cypress family, alongside the Hinoki and Sugi. Hiba trees take up to 300 years to grow into a highly durable tree with a natural resistance to mildew growth. Hiba wood has been highly valued as a building material in traditional Japanese architecture.
Hiba wood oil is extracted from the wood waste of matured Aomori Hiba trees through water vapor distillation. This natural wood oil has strong insect-repellent and deodorizing properties. It is characterised by a cedar-like aroma which has a naturally calming effect.

Unlike ordinary products that are only passed through automatic machines, all the pieces are finished by craftsmen so that food does not slip on the board easily. Thanks to this finish, the ingredients are easier to cut, helping to improve cooking efficiency.
These type of cutting boards cannot be mass-produced. No adhesives that connect the boards or chemical coating substances for surface protection are used.

HOW TO CARE
Before using, wet the board surface to prevent stains and odors. After using, wash with soap and warm water then stand on its short side to dry. Drying with the wood grains vertical allows the water to drain from the wood.
